Organic clean slow cooked beef curry
Dust off the slow cooker, head to About life get a trolley and get ready for the healthiest, low carb curry ever.
Ingredients:
500 gms of Organic beef. Get some with a bit of fat otherwise the slow cooking process will dry it out.
2 Carrots
½ a sweet potato
Half a cauliflower
1 onion
2 cloves garlic
Ginger (thumbs size) grated
Ground Cumin 2 tsp.
Ground coriander 2 tsp.
Ground Cardamom 1/4tsp
Ground Turmeric 1 tsp.
Ground Cayenne pepper 1/4 tsp.
Tin diced tomatoes 400gms
Organic Beef stock (3 cups)
Salt and pepper
Coriander and Mint to garnish
Organic Greek smooth yogurt (garnish)
Method
In a saucepan fry up garlic, onion and grated ginger.
Place in the slow cooker. Add all veggies and beef cut in cubes.
Place tin tomatoes and beef stock as well as all spices. Stir. Add some rock salt and pepper.
I put mine on around 1:30pm on high and cooked it for 5 hours. There was excess liquid I took out at 4pm and then left the lid off to thicken until I ate it.
Cook some rice, broccoli or anything else, heap curry on top. Dollop Greek yogurt on top then add some mint and coriander to taste.
